Wholesome and Delicious: Cooking with Potatoes and Flour

  • 2 large potatoes
  • 3/4 cup of whole wheat flour (plus extra for dusting)
  • Salt and pepper to taste

Instructions:

  1. Cook the Potatoes:
    • Boil the potatoes with their skins on until they are completely soft. Drain and allow them to cool just enough to handle, then peel.
    • Mash the potatoes thoroughly to avoid lumps, or pass them through a potato ricer for a finer texture.
  2. Make the Gnocchi Dough:
    • On a clean surface, mix the mashed potatoes with whole wheat flour and a pinch of salt and pepper. Combine to form a smooth dough.
    • Divide the dough into sections and roll each into long, thin ropes. Cut these into small pieces to form the gnocchi.
  3. Cook the Gnocchi:
    • Bring a large pot of salted water to a boil. Drop the gnocchi in gently and cook until they float to the surface, indicating they are done.
    • Remove with a slotted spoon and toss with your favorite sauce.
