Slow Cooked Beef Stew Recipe

Ingredients:

  • 750g diced beef
  • 1 tsp steak seasoning
  • 1 large leek, diced
  • 3 large carrots, diced
  • 1 tsp paprika
  • 1/2 tsp mixed herbs
  • 1 tsp fresh rosemary, chopped
  • 2 sprigs fresh thyme (off the stem)
  • A good splash of red wine (optional)
  • 300ml chicken or beef stock
  • 1 tbsp unsalted butter
  • 2 tbsp plain flour
  • 1 tbsp tomato purée
  • Salt/pepper to taste

Method:

1. Season and Sear:

  • Season the diced beef with salt, pepper, steak seasoning, and paprika.
  • Sear the seasoned beef in a pan with a couple of tablespoons of vegetable oil until browned. Remove from the pan.

2. Saute Vegetables:

  • In the same pan, add diced leeks and carrots. Season with salt and cook for a few minutes.
  • Add unsalted butter, allow it to melt, then add plain flour. Mix well.
