Pumpkin Cheesecake Bars

Preheat Oven:
Preheat to 350ºF. Line a 9×13” baking pan with parchment paper and spray with oil.
Prepare the Crust:
Process Biscoff cookies into fine crumbs.
Mix crumbs with brown sugar and melted butter.
Press the mixture into the prepared pan and bake for 10 minutes. Set aside.
Make Cheesecake Batter:
Beat softened cream cheese until creamy.
Add granulated sugar and brown sugar, beat to combine.
Mix in sour cream.
Add eggs one at a time, mixing well after each addition.
Mix in vanilla extract.
Divide batter: pour 2 cups into a separate bowl.
To the separate bowl, add pumpkin puree, pumpkin pie spice, cinnamon, and nutmeg. Mix until combined.
Assemble the Cheesecake:
Pour 2/3 of the plain cheesecake batter over the crust.
Add dollops of pumpkin batter on top.
Scatter remaining plain cheesecake batter and swirl with a spatula or knife.
Place the baking dish in a larger pan and fill the larger pan with hot water to create a water bath.
