  • Locate a pot and place all the ripe tomatoes in it, minus the seeds and about a glass of water. Let the tomatoes soak over low heat until softened;
  • Once the tomatoes have become softer, pass them through a vegetable strainer or, if you do not have such a device, pass the tender, ripe tomatoes through a regular sieve and set aside;
  • Meanwhile, brown the small chopped onion and 2 crushed garlic cloves in the oil. Fry them until they start to turn golden;
