Ingredients:
- 750g diced beef
- 1 tsp steak seasoning
- 1 large leek, diced
- 3 large carrots, diced
- 1 tsp paprika
- 1/2 tsp mixed herbs
- 1 tsp fresh rosemary, chopped
- 2 sprigs fresh thyme (off the stem)
- A good splash of red wine (optional)
- 300ml chicken or beef stock
- 1 tbsp unsalted butter
- 2 tbsp plain flour
- 1 tbsp tomato purée
- Salt/pepper to taste
Method:
1. Season and Sear:
- Season the diced beef with salt, pepper, steak seasoning, and paprika.
- Sear the seasoned beef in a pan with a couple of tablespoons of vegetable oil until browned. Remove from the pan.
2. Saute Vegetables:
- In the same pan, add diced leeks and carrots. Season with salt and cook for a few minutes.
- Add unsalted butter, allow it to melt, then add plain flour. Mix well.
