Strawberry Shortcake Crunch Cake with Cream Cheese Frosting Recipe

8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

2. Prepare the Cake Batter:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs. In a separate bowl, whisk together the milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced strawberries.

3. Make the Crunch Topping:
In a medium bowl, combine melted butter, granulated sugar, brown sugar, rolled oats, and chopped nuts. Mix until well combined.

4. Assemble and Bake:
Spread the cake batter evenly in the prepared baking pan. Sprinkle the crunch topping evenly over the batter. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before frosting.

5. Prepare the Cream Cheese Frosting:
In a large bowl, beat together the softened cream cheese and butter until smooth. Add the powdered sugar and vanilla extract, and continue to beat until the frosting is creamy and well combined.

6. Frost the Cake:
Once the cake has cooled, spread the cream cheese frosting over the top. You can garnish with additional sliced strawberries or chopped nuts if desired.

7. Serve and Enjoy:
Cut into squares, serve, and enjoy your delicious Strawberry Shortcake Crunch Cake with Cream Cheese Frosting!
