Strawberry Cheesecake Cookies

Preheat oven to 350°F (175°C).
In a small bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Mix in the cream cheese until just blended.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped strawberries and graham cracker crumbs.
Drop dough by tablespoonfuls onto a baking sheet lined with parchment paper, spacing cookies about 2 inches apart.
Bake for 12-15 minutes or until the edges are golden brown.
Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
