Steak and Shrimp Scampi

Instructions:

1. Season the steaks with salt and pepper on both sides. Set aside and let them come to room temperature.

2. In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat.

3. Add the steaks to the skillet and cook for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your desired level of doneness. Remove the steaks from the skillet and let them rest for a few minutes.

4. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.

5. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

6. Deglaze the skillet by pouring in the white wine and lemon juice. Scrape the bottom of the skillet to loosen any browned bits.

7. Add the chicken or vegetable broth to the skillet and let it simmer for a couple of minutes to reduce slightly.

8. Add the remaining 2 tablespoons of butter to the skillet and stir until melted and combined with the sauce.

9. Return the shrimp to the skillet and toss them in the sauce to coat evenly.

10. Slice the rested steaks into thin strips and add them to the skillet with the shrimp and sauce. Gently toss everything together.

11. Sprinkle the chopped parsley over the steak and shrimp scampi and give it a final toss.

12. Serve the steak and shrimp scampi over cooked pasta or rice, and garnish with additional parsley if desired.
