Muffin tins are actually a multi-purpose kitchen gadget! This potato stacking recipe with Parmesan cheese is made for 4 to 6 people and is the perfect complement to any meal. You will need 8-10 potatoes, sliced into 1/16 inch slices, 3 teaspoons butter, 2 teaspoons Parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon thyme leaves, salt and pepper.
Preheat the oven to 3500. Melt the butter and some to coat the muffin pan. Place the potato slices in a large bowl and add the Parmesan cheese, garlic, thyme and the remaining butter. Toss to coat. Put potatoes in piles in a muffin pan. Sprinkle each pile with some salt and pepper. Placing muffin pan in oven & baking for 56-61 min or until you see golden brown edges and the centers are soft.
