Potato Bake Delight: A Pizza Alternative
- Parsley: Chopped, to taste
- Plain Yogurt: For the base
- Mayonnaise: 1 tablespoon
- Salt and Pepper: To taste
Instructions:
- Prepare the Vegetable Mixture:
- In a large mixing bowl, combine the grated potatoes, spring onions, bell pepper, and carrot. Add salt and pepper to taste and mix well.
- Make the Batter:
- To the vegetable mixture, add the beaten eggs, milk, flour, and baking powder. Stir until well combined. The batter should be thick but pourable. Adjust the consistency with a little more milk or flour if necessary.
