  • Parsley: Chopped, to taste
  • Plain Yogurt: For the base
  • Mayonnaise: 1 tablespoon
  • Salt and Pepper: To taste

Instructions:

  1. Prepare the Vegetable Mixture:
    • In a large mixing bowl, combine the grated potatoes, spring onions, bell pepper, and carrot. Add salt and pepper to taste and mix well.
  2. Make the Batter:
    • To the vegetable mixture, add the beaten eggs, milk, flour, and baking powder. Stir until well combined. The batter should be thick but pourable. Adjust the consistency with a little more milk or flour if necessary.
