Pistachio Bread

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a mixing bowl, whisk together the flour, pistachio pudding mix, granulated sugar, brown sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in the Greek yogurt until the batter is smooth and no flour streaks remain.
Gently fold in the chopped pistachios into the batter.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
