Pineapple Pork

Prepare the sauce:

In a small bowl, mix together the soy sauce, honey, rice vinegar, and sesame oil. Set aside.

Stir-fry the pork:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and season with salt and pepper. Stir-fry until the pork is browned and cooked through, about 4-5 minutes. Remove the pork from the skillet and set aside.

Cook the vegetables:

In the same skillet, add another tablespoon of vegetable oil if needed. Add the sliced onion, minced garlic, and red bell pepper. Stir-fry for 2-3 minutes, or until the vegetables are slightly softened.

Combine everything:

Return the cooked pork to the skillet. Add the pineapple chunks (along with any juice from the can, if using). Pour the prepared sauce over the pork and vegetables. Stir everything together until well combined.

Thicken the sauce (optional):

If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Pour the slurry into the skillet and stir well. Cook for an additional 1-2 minutes, or until the sauce has thickened.
