Pineapple Bread

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
In a large bowl, combine flour, sugar, baking soda, and salt.
In a separate bowl, whisk together crushed pineapple, eggs, vegetable oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in chopped nuts if using.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow the pineapple bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
