Pecan Pie Cobbler

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup melted butter

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large mixing bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, and vanilla extract until well combined.
  3. Stir in the chopped pecans until evenly distributed.
  4. Pour the pecan filling into the prepared baking dish, spreading it out evenly.
  5. In another mixing bowl, whisk together the flour, granulated sugar, milk, baking powder, and salt until smooth.
  6. Slowly pour the cobbler topping mixture over the pecan filling in the baking dish.
  7. Drizzle the melted butter evenly over the top of the cobbler batter.
  8. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the cobbler topping is golden brown and set.
  9. Remove from the oven and allow to cool for a few minutes before serving.
  10. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
