Maple Mashed Sweet Potatoes with Marshmallow Butter

Maple Mashed Sweet Potatoes with Marshmallow Butter – the side dish everyone will be yammering about for days (pun intended)! This easy side dish is packed full of flavor, takes less than 30 minutes to prepare, doesn’t require the oven, and can be made ahead of time! You’re welcome 🙂

Ingredients

  • 2 to 3 pounds sweet potatoes
  • 1/4 to 1/3 cup half and half OR heavy whipping cream
  • 2 tbsp fresh sage minced
  • 1/4 cup REAL maple syrup
  • 3 tbsp butter
  • salt and pepper to taste
  • 1 cup miniature marshmallows
  • 1/4 cup butter
  • 1/2 cup chopped pecans
  • 2 tbsp freshly squeezed orange juice
  • pinch of cayenne pepper

Instructions

    • This recipe can easily be doubled.
    • Bring a large pot of generously salted water to a boil.
    • Peel sweet potatoes and cut into 3 – 4 inch chunks. Place in boiling water and cook until tender, about 20 minutes.
    • Drain well and return sweet potatoes to hot pot.
    • Mashed sweet potatoes together with half and half, sage, maple syrup, butter, salt and pepper.
  • If making ahead of time, cool, cover and refrigerate. Warm before serving.
  • When ready to serve:
  • Combine marshmallows, butter, pecans, orange juice, and cayenne in a microwave safe container. Heat on high for 30 seconds, stir. Repeat until butter has melted and marshmallows have softened and partially melted.
  • Serve with mashed sweet potatoes or pour on top and serve together.
