Lemon Loaf

1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
2. Prepare the Lemon Loaf:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
Stir in the lemon juice, lemon zest, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
3. Bake the Lemon Loaf:
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
4. Prepare the Lemon Glaze:
In a small bowl, whisk together the powdered sugar and lemon juice until smooth and pourable. If you prefer a thicker glaze, use less lemon juice.
5. Glaze the Lemon Loaf:
Once the loaf has cooled, drizzle the lemon glaze over the top, allowing it to drip down the sides.
Let the glaze set for a few minutes before slicing and serving.
This Lemon Loaf is bursting with fresh lemon flavor and topped with a sweet-tart glaze that makes it irresistible. Perfect for breakfast, dessert, or as a snack with your favorite cup of tea. Enjoy every tangy bite!
