  • 1 ripe pineapple
  • 1 cup canned coconut milk (full-fat for creamier texture)
  • 2-3 tablespoons honey or maple syrup (adjust according to taste)
  • 1 teaspoon vanilla extract
  • Optional: a squeeze of fresh lime juice for extra tanginess

Instructions:

  1. Prepare the pineapple by cutting off the crown, removing the skin, and cutting it into chunks.
  2. Place the pineapple chunks on a baking sheet lined with parchment paper and freeze until solid, about 2-3 hours or overnight.
