- In a bowl with the boiled potatoes, add the flour, eggs, extra virgin olive oil, dry yeast, water and salt, and mix until the dough is created. Transfer to a work surface and knead until smooth.
- Transfer the dough to the bowl, cover and let it rest for two hours.
- After the time has elapsed, transfer the dough to the floured work surface and roll it out with the rolling pin to a thickness of 1/2 cm/
- Cut circles with the mold to a size of 7-8 cm, and fill them in the center with cooked ham and cheese. Add another circle on top of the first and pinch all the way to get donuts.
- Fry for 4-5 minutes on each side or bake for 20 minutes at 190°
