CURRIED CHICKEN & MANGO SALAD 

In a small bowl mix the yoghurt, curry paste, mango chutney and chopped fresh mint until combined. Add half of the sauce to your pre-cooked chicken and mix together.

Prepare a bed of lettuce with with your favourite veggies on the side. Lay the chicken in the center with chopped mangoes, feta cheese on top and drizzle the remaining sauce.

NOTE: When I make any kind of salad that has chicken and a dressing included, I like to poach and cook the chicken breast in a pan with water fully covering the breast. Leave it to simmer covered for 45 mins. When ready open the lid slightly and leave it to cool till you can touch it by hand, then cut it into bite sized pieces. Cooking it this way makes the chicken moist and tender.
