Crispy Zucchini Fritters with Mozzarella and Dill
In a large bowl, combine grated zucchini, shredded mozzarella, chopped dill, breadcrumbs, eggs, salt, and pepper. Mix until well combined.
Heat olive oil in a large skillet over medium heat.
Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with a spatula.
Fry for 3-4 minutes on each side until golden brown and crispy.
Remove from skillet and place on a paper towel-lined plate to drain excess oil. Serve hot.
