CREAMY LEMON SQUARES

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners’ sugar
  • 3/4 cup unsalted butter, cold and cut into small pieces

For the filling:

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup all-purpose flour
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper for easier removal.
  2. In a mixing bowl, combine the flour and confectioners’ sugar. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven for about 18-20 minutes, or until lightly golden brown.
  4. While the crust is baking, prepare the filling. In another mixing bowl, beat the eggs until frothy. Gradually add in the granulated sugar, lemon juice, lemon zest, and flour. Mix until well combined and smooth.
  5. Once the crust is baked, pour the filling over the hot crust. Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles when gently shaken.
  6. Remove from the oven and let cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 1 hour before cutting into squares.
  7. Optionally, dust the tops of the lemon squares with powdered sugar before serving. Cut into squares and enjoy!
