Creamy Cucumber Shrimp Salad Recipe

Prepare the Dressing:
In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, and fresh lemon juice until smooth. Stir in the chopped fresh dill or chives. Season with salt and pepper to taste. If using, add the optional celery and/or red onion to the dressing and mix well.
Combine with Shrimp and Cucumber:
Add the chilled, cooked shrimp and sliced cucumbers to the bowl with the dressing. Gently toss to ensure that the shrimp and cucumbers are evenly coated with the creamy dressing. Be careful not to break the cucumber slices while mixing.
Chill Before Serving:
Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together. This chilling time also ensures the salad is served cold, enhancing its refreshing quality.
Serve:
Give the salad a gentle stir before serving. Taste and adjust seasoning with additional salt and pepper if necessary. Serve chilled, garnished with additional chopped dill or chives if desired.
