CREAM DONUTS

1. Beat the lukewarm water with 50g of all the sugar and add dry yeast. Beat again and reserve for 5 minutes.

2. Add the leftover sugar, buttermilk, eggs, and melted butter into the yeast solution. Beat until the sugar dissolves.

3. Combine liquids with flour and knead dough until smooth, about 10 minutes. Transfer to a greased bowl, cover and set aside for 1 hour.

4. Stretch the dough and cut it into circles. Use a smaller round cutter to cut out the center of half of the dough circles.

5. Spray a little water over the entire round and place circles with the hole in the middle on top. Press lightly. Set aside for 15 minutes.

6. Heat vegetable oil to 180C / 350F. Fry the donuts on both sides for 3-4 minutes. If the center swells, make a small slit to release the air.

7. Coat the browned donuts with sugar and fill each hole in the donut with custard.
