Meat Sauce –

In a large deep pan, heat a little olive oil. Add the onions and cook until softened. Add in the garlic and saute for about 1 minute, until fragrant. Add the ground beef and cook until browned.

Pour in the passata, crushed tomatoes, crumbled beef cubes, tomato paste, dried herbs, sugar and season with salt and pepper. Mix well to combine and bring to a gentle simmer. Cover and cook for 11/2 hours, occasionally stirring inbetween.

White Sauce –

In a large pot, melt the butter over medium heat. Reduce heat to low; add the flour and whisk until well blended. Whisk in 1 cup of milk until well combined, then add remaining milk. Increase heat to medium and continue cooking sauce until thickened, stirring continuously. Remove from heat, add in nutmeg and season with salt and pepper.
