Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce

Ingredients:

  1. Four boneless, skinless chicken breasts
  2. To taste, season with salt and pepper
  3. Olive oil, two teaspoons’ worth
  4. 1 tablespoon of minced garlic cloves 3 cloves of chopped tiny onio
  5. sliced mushrooms, two cups’ worth
  6. 2 cups of spinach that is fresh
  7. 10 ounces of thick cream
  8. One-half cup of chicken broth
  9. grated Parmesan cheese equalling half a cup
  10. 1 milligramme of this Italian seasoning
  11. a quarter of a teaspoon of crushed red pepper (optional)
  12. Parsley, fresh and chopped (for use as a garnish)

How to proceed:

  1. Add salt and pepper to the chicken breasts before cooking them.
  2. Within a large skillet, bring the olive oil to a temperature of medium-high. After adding the chicken breasts, sauté them for five to seven minutes on each side, or until they are golden brown and cooked all the way through. Take the food out of the skillet and put it aside.
  3. Add the chopped onion to the same pan and sauté it for three to four minutes, or until it has become more tender. Sauté the garlic that has been minced for a further one to two minutes.
  4. Place the sliced mushrooms in the pan and cook them for five minutes, or until they begin to become coloured.
  5. Fresh spinach should be stirred in and cooked until it has wilted.
  6. Heavy cream and chicken broth should be added to the mixture, and then it should be brought to a boil.
  7. The grated Parmesan cheese, Italian seasoning, and red pepper flakes, if used, should be mixed in a stirring motion. Cook for around three to four minutes, or until the sauce has thickened.
  8. The chicken breasts should be returned to the pan, and the creamy sauce should be spooned over them. Continue cooking for a further two to three minutes to ensure that the food is well heated.
  9. Immediately before to serving, garnish with fresh parsley.
