Chicken Roll Ups

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 teaspoon Garlicpowder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

For the Filling:

  • 1 cup spinach leaves, fresh or cooked and drained
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup cream cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

For the Coating:

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons melted butter

Instructions:

1. Prepare the Chicken:

Begin your culinary journey by preparing the chicken breasts:

  • Preheat your oven to 375°F (190°C).
  • Place a chicken breast between two sheets of plastic wrap or parchment paper.
  • Use a meat mallet or rolling pin to gently pound the chicken to an even thickness, about 1/4-inch thick.
  • Season both sides of the chicken with salt, black pepper, garlic powder, and paprika.

2. Create the Filling:

Now, let’s prepare the flavorful filling for your Chicken Roll Ups:

  • In a mixing bowl, combine the cream cheese, minced garlic, dried basil, and dried oregano. Mix until well combined.
  • Lay out each chicken breast and spread a generous tablespoon of the cream cheese mixture over the surface.
  • Top with a layer of spinach leaves, sun-dried tomatoes, and a sprinkle of shredded mozzarella cheese.

3. Roll and Secure:

Rolling and securing the chicken breasts is the next step:

  • Carefully roll up each chicken breast, starting from one end, to encase the filling. Secure with toothpicks to keep the roll-ups in place during cooking.

4. Coat the Roll Ups:

To create that crispy, golden exterior, coat the roll-ups with a breadcrumb mixture:

  • In a shallow dish, combine the breadcrumbs and grated Parmesan cheese.
  • Roll each chicken roll-up in the breadcrumb mixture, ensuring an even coating.
  • Place the coated roll-ups on a baking sheet, seam side down.

5. Bake to Perfection:
