Chicken Parmesan Casserole

Instructions:

1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or a light coating of oil.

2. Season the chicken breasts with salt and pepper on both sides.

3. Set up a breading station with three shallow bowls or plates. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, spread out the breadcrumbs.

4. Dredge each chicken breast in flour, making sure to shake off any excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat the chicken in breadcrumbs, pressing gently to adhere the breadcrumbs to the chicken. Repeat this process with all the chicken breasts.

5. Heat a large skillet over medium-high heat and add a few tablespoons of oil. Cook the breaded chicken breasts for about 3-4 minutes on each side, or until they are golden brown. You don’t need to cook them through at this point, as they will finish cooking in the oven. Once browned, remove the chicken from the skillet and set aside.

6. Spread a thin layer of marinara sauce on the bottom of the greased baking dish. Place the browned chicken breasts on top of the sauce.

7. Pour the remaining marinara sauce over the chicken, making sure each breast is covered. Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan cheese.

8. Bake the casserole in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

9. Once cooked, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh basil leaves, if desired.

10. Serve the Chicken Parmesan Casserole hot with a side of pasta, garlic bread, or a green salad.
