Preheat the oven to 375°F (190°C).
Make a deep cut along the side of each chicken breast to create a pocket. Season inside and out with salt and pepper.
In a skillet, heat olive oil over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Let it cool.
In a bowl, mix ricotta, Parmesan, garlic powder, red pepper flakes, and cooled spinach.
Stuff each chicken breast with the spinach-cheese mixture and secure with toothpicks.
Place stuffed chicken breasts in a baking dish and top with shredded mozzarella.
Bake for 25-30 minutes or until the chicken is thoroughly cooked.
Serve hot, garnished with fresh parsley if desired.
