Carrot Loaf Recipe

• Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.

• In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

• In a large mixing bowl, beat together the melted butter and sugar until creamy.

• Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

• Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

• Fold in the grated carrots, and raisins or dried fruits, if using.

• Pour the batter into the prepared loaf pan and spread it evenly.

• Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

• Allow the carrot loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

• Once cooled, slice and serve. Enjoy your homemade carrot loaf!
