Candied Orange Slices

Preparation

  1. Wash and brush the oranges, dry them.
  2. Remove the edges from each orange and cut 5mm thick slices.
  3. In a slightly large frying pan, pour the sugar and water. Bring to medium heat, be careful not to caramelize the sugar. Add the orange slices and cook gently over low heat for 15 minutes.
  4. Stop cooking and let the oranges cool completely in the syrup.
  5. Repeat this operation (cooking for 15 minutes + cooling) between 4 and 5 times until there is almost no more syrup and the slices are translucent.
  6. The syrup has thickened and should coat the orange slices, using a spatula spread the slices on a rack with a sheet of baking paper underneath. Leave to air dry for 48 hours.
  7. You can dry the orange slices in the oven for 1-2 hours at 90°C, but after reading several times that this step hardens the slices, I skipped it and let it air dry.
  8. Do not throw away the remaining syrup, pour it into a jar of jam to preserve it and use it in a cake or gingerbread.
