Bourbon Bacon Jam

Cook the diced bacon in a large skillet over medium heat until it becomes crispy. Remove the bacon from the skillet and set aside, leaving about 2 tablespoons of bacon fat in the pan.
Add the chopped onion to the skillet and cook until softened and translucent, about 5 minutes.
Stir in the minced garlic and cook for another minute, until fragrant.
Add the brown sugar, maple syrup, balsamic vinegar, and bourbon to the skillet. Stir well to combine, then bring the mixture to a simmer.
Return the cooked bacon to the skillet and mix it with the sauce. Add smoked paprika and cayenne pepper, then season with salt and pepper to taste.
Reduce the heat to low and let the mixture simmer for about 30-40 minutes, stirring occasionally, until it thickens and reaches a jam-like consistency.
Once the jam has thickened, remove it from the heat and let it cool slightly before transferring it to a jar or airtight container.
