Better Than Take-Out Fried Rice

Heat sesame oil in a large skillet or wok over medium heat.
Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
In the same skillet, add more sesame oil if needed and stir-fry the mixed vegetables until tender.
Add cooked chicken to the skillet and stir-fry for another 2-3 minutes.
Add cooked rice to the skillet and break up any clumps.
Pour soy sauce and oyster sauce over the rice mixture and stir well to combine.
Add the scrambled eggs back to the skillet and stir to incorporate.
Cook for an additional 2-3 minutes, stirring frequently.
Season with salt and pepper to taste, then garnish with chopped green onions and sesame seeds if desired.
Serve hot and enjoy!
