Basil Pesto Chicken and Veggies Recipe

  • METHOD:
    1. In order to prepare the chicken, heat two tablespoons of olive oil in a large pan over medium-high heat.
    2. Add some salt, pepper, and Italian seasoning to the chicken pieces, and sprinkle them with salt. Put the chicken in the skillet and cook it for approximately six to eight minutes, or until it is golden brown and cooked all the way through. Put the chicken in a separate bowl after removing it from the pan.
    3. In order to prepare the vegetables, add the remaining tablespoon of olive oil to the skillet that you are using.
Put the cauliflower and broccoli florets into the pan and stir them around. Stir-fry them for around five to seven minutes, or until they begin to become softer and light golden in colour.
    4. Ingredients should be combined by adding the chopped sun-dried tomatoes to the pan containing the vegetables and stirring to blend the ingredients.
    5. Replace the chicken that has been cooked in the pan and mix all of the ingredients together.
    6. For the pesto, add:
    7. The pesto should be added to the pan after the heat has been reduced to medium. Make sure that all of the ingredients are evenly covered with the pesto by stirring them gently. Allow the flavours to combine for an extra two to three minutes while the food is cooking.
    8. Serve: Serve the chicken and vegetables topped with pesto very hot. An additional layer of flavour may be achieved by garnishing the dish with freshly grated Parmesan cheese, if preferred.
    9. As an optional garnish, sprinkle some fresh basil or more Parmesan cheese over the top of the dish just before serving to enhance the flavour and freshness of the dish.

    Advice:
Variation on Pesto: If you would like a lighter version of the pesto, you may thin it up with a little bit of chicken stock or water before adding it to the pan.
Adding Texture: If you want the broccoli and cauliflower to have a crunchier texture, you can choose to roast them in the oven at 400 degrees Fahrenheit (200 degrees Celsius) for approximately twenty minutes before adding them to the pan.
Variations on Protein: In addition to using chicken, this meal may also be prepared using prawns or tofu as an alternative to chicken for a different kind of protein.
