Baked Pineapple Pork Chops

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare Pork Chops: Season the pork chops with salt and pepper on both sides.

Brown Pork Chops: Heat a skillet over medium-high heat and add a little oil. Brown the pork chops on both sides until golden brown, about 2-3 minutes per side. Remove the pork chops from the skillet and set aside.

Prepare Sauce: In a small bowl, mix together the reserved pineapple juice, brown sugar, soy sauce, ketchup, minced garlic, and minced ginger.

Assemble: Place the browned pork chops in a baking dish. Lay a pineapple slice on top of each pork chop.

Pour Sauce: Pour the sauce mixture evenly over the pork chops and pineapple slices.

Bake: Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).
