Baked Avocado Eggs Recipe

  • 2 ripe avocados
  • 4 eggs
  • Salt and pepper, to taste
  • Optional toppings: chopped herbs (such as parsley or cilantro), shredded cheese, hot sauce

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the avocados in half and remove the pits. If needed, scoop out a bit of flesh from each avocado half to make room for the eggs.
  3. Place the avocado halves on a baking sheet or in a baking dish, ensuring they’re stable and won’t tip over.
  4. Crack an egg into each avocado half, making sure the yolk fits into the hole left by the pit. You can also scoop out a bit more avocado if needed to accommodate the egg.
  5. Season each avocado half with salt and pepper, to taste.
  6. Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolks reach your desired level of doneness. Keep an eye on them to prevent overcooking.
  7. Once baked, remove the avocado eggs from the oven and let them cool for a few minutes.
  8. Optional: Sprinkle with chopped herbs, shredded cheese, or a drizzle of hot sauce before serving.
