AVOCADO TACOS

  • 2 ripe avocados, peeled, pitted, and diced
  • 1 small red onion, finely chopped
  • 1 large tomato, diced
  • 1/2 cup fresh cilantro leaves, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Optional: 1 jalapeño pepper, finely chopped (for heat)

For the Taco Shells:

  • 8 small taco shells or tortillas (corn or flour, based on your preference)
  • 1 tablespoon vegetable oil (for heating the taco shells)

Optional Toppings:

  • Shredded lettuce
  • Sliced black olives
  • Grated cheese
  • Sour cream
  • Salsa or hot sauce
  • Sliced radishes
  • Sliced bell peppers
