Avocado Salad Recipe

  • 2 ripe avocados, peeled, pitted, and diced
  • 1 large tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro (you can adjust according to your preference)
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Optional add-ins:

  • 1/2 cup corn kernels (fresh, canned, or thawed frozen)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup diced bell peppers (any color you prefer)
  • 1/4 cup crumbled feta cheese
  • 1 jalapeño pepper, seeded and minced for a spicy kick

Instructions:

  1. In a large bowl, combine the diced avocados, diced tomatoes, sliced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the avocado mixture and gently toss until everything is well coated.
  4. If you’re adding any optional ingredients like corn, black beans, bell peppers, feta cheese, or jalapeño, add them to the salad and toss gently to combine.
