Ingredients
For the Turkey
- 2 to 3 pounds boneless skin-on turkey breast
- 2 tablespoons butter softened
- 2 teaspoons fresh thyme chopped
- 2 garlic cloves minced (about 1 teaspoon)
- 1 teaspoon orange zest
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
For the Savory Sweet Potatoes (*see notes below for a sweet option)
- 2 large sweet potatoes peeled and cut into 1” cubes –
- 1 teaspoon olive oil
- 1 teaspoon fresh thyme chopped
- ½ teaspoons salt
- ¼ cup grated Parmesan cheese
