Oh my, I normally like this as a soup, but the casserole version is even better!
Sun-dried Tomato and Chicken Tortellini Bake
Ingredients:
1 lb (450g) chicken breast, diced
1 tablespoon olive oil
Salt and pepper to taste
1 lb (450g) cheese tortellini
1 cup sun-dried tomatoes, drained and chopped
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
2 cups baby spinach
1 (15 oz) can diced tomatoes
1 cup heavy cream
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish (optional)
