- 2 acorn squash or butternut squash if you prefer
- ½ pound Italian sausage mild or spicy OR lean ground beef or ground turkey
- 1 tablespoon extra virgin olive oil
- ½ large onion diced
- 2 celery stalks chopped
- ½ large apple chopped
- 2 cloves garlic minced
- 3 cups kale cleaned and chopped
- 2 teaspoons chopped sage leaves
- 1 teaspoon minced fresh rosemary
- ½ teaspoon fresh thyme minced
- 1 teaspoon sea salt or kosher salt
- ½ teaspoon freshly ground black pepper
- ½ cup feta cheese crumbles or goat cheese
